15-Minute Chicken Fajita Bowls

·

Some weeknights, dinner needs to happen fast, feed everyone, and not leave the kitchen looking like a disaster zone. That’s exactly what these chicken fajita bowls do: juicy seasoned chicken, charred peppers and onions, fluffy rice, and whatever toppings your family likes — one pan, about 15 minutes.

Here’s the honest trick: the rice is already cooked. A microwave pouch, Sunday’s leftovers, or a batch from earlier in the day gets you to the table in 15 minutes flat. Starting from dry rice? Add 20 minutes — still a weeknight win.

Why These Work on a Busy Weeknight

  • One pan. The chicken and the veg cook in the same skillet, back to back.
  • High protein. Around 35–40 g per bowl, which means everyone stays full until morning.
  • Customizable without extra cooking. Rice for the big eaters, lettuce or cauliflower rice for the lighter option — same pan of chicken and veg for both.
  • Regular grocery store ingredients. No specialty shops, no hard-to-find spices.

Ingredients (Makes 4 Bowls)

  • 500 g (1 lb) boneless, skinless chicken breasts, sliced into thin strips (about 1 cm / ½ inch thick so they cook fast)
  • 15 mL (1 tbsp) olive oil or avocado oil
  • 1 large red bell pepper, cut into strips
  • 1 large yellow or orange bell pepper, cut into strips
  • 1 medium red onion, thinly sliced
  • 30 mL (2 tbsp) fajita seasoning (store-bought, or see the homemade mix below)
  • 1 L (4 cups) cooked long-grain rice, warmed (about 250 mL / 1 cup per bowl)
  • 1 lime, cut into wedges
  • 5 mL (1 tsp) salt, if your seasoning blend is salt-free

Optional toppings: 125 mL (½ cup) salsa, 125 mL (½ cup) plain Greek yogourt (a higher-protein stand-in for sour cream), 1 diced avocado, 60 mL (¼ cup) chopped fresh cilantro, 125 mL (½ cup) drained black beans.

Quick homemade fajita seasoning: 10 mL (2 tsp) chili powder, 5 mL (1 tsp) each cumin and paprika, 2 mL (½ tsp) each garlic powder, onion powder, and dried oregano, 1 mL (¼ tsp) cayenne (optional). Shake in a small jar — it keeps for months.

Method

  1. Set up. Have your cooked rice warming, chicken sliced, and veg cut before the pan gets hot. This is the real 15-minute secret — no chopping mid-cook.
  2. Cook the chicken. Heat the oil in a large skillet over medium-high heat until it shimmers. Add the chicken in a single layer and sprinkle over half the fajita seasoning. Cook 6–8 minutes, stirring once or twice, until the strips are cooked through with no pink remaining.
  3. Check the temperature. Insert a food thermometer into the thickest strip — it should read 74°C (165°F), the safe internal temperature for chicken pieces per Health Canada. Colour alone isn’t reliable, so this step matters. Set the chicken aside on a clean plate (not the one that held it raw).
  4. Char the veg. Add the peppers, onion, and remaining seasoning to the same pan. Cook 3–4 minutes, stirring occasionally, until softened with a few charred edges.
  5. Bring it together and serve. Return the chicken to the pan, squeeze the lime over everything, and toss for 30 seconds. Build the bowls: rice on the bottom, chicken and veg on top, then toppings. Done.

Food-Safety Notes

A couple of numbers worth pinning to the fridge door, from Health Canada’s guidance:

  • Cook chicken pieces to 74°C (165°F). Use a food thermometer — it’s the only way to know for sure.
  • Keep raw chicken away from ready-to-eat food. Wash your hands, cutting board, and utensils with hot soapy water after handling raw chicken, and never put cooked chicken back on the plate that held it raw.
  • Refrigerate leftovers within 2 hours of cooking, in shallow airtight containers, at 4°C (40°F) or lower. Eat them within 3–4 days.
  • Reheat leftovers until steaming hot — 74°C (165°F) all the way through, and don’t reheat the same leftovers more than once.
  • Rice needs the same care. Cool it quickly, refrigerate within 2 hours, and use within 3–4 days. Uncooked rice can carry Bacillus cereus spores that survive cooking and grow if rice sits warm too long — the counter is not a cooling rack.

Tips and Variations

  • Make it even faster: use leftover or rotisserie chicken. Shred it, warm it in the pan with the seasoning and a splash of water, and make sure it reaches 74°C (165°F) before serving.
  • Lower-carb: swap the rice for cauliflower rice (frozen works — cook it in the same skillet first) or serve over chopped romaine for fajita salad bowls.
  • Kid-friendly: set out the components and let everyone build their own bowl. The same filling in soft tortillas becomes build-your-own fajitas with zero extra cooking.
  • Frozen veg shortcut: a bag of frozen pepper-and-onion stir-fry blend goes straight into the hot pan — no chopping at all. Add a minute or two to the cooking time.
  • Meal-prep it: portion rice, chicken, and veg into 4 airtight containers and refrigerate. Reheat individual portions until steaming hot. Pack toppings (yogourt, avocado, cilantro) separately and add them fresh.
