The Cozy Slow Cooker Soup Your Whole Family Will Actually Eat

·

Fall evenings are not the time for complicated dinners. The kids are hungry, you’re tired, and the slow cooker has been doing the work for you since morning. This is the soup we make on repeat all season: hearty harvest vegetables and lentils in a rich tomato broth, the kind of bowl that warms everyone up and leaves enough for tomorrow’s lunches.

Why this one works on busy weeknights

  • Ten minutes of prep. Everything goes in the slow cooker in the morning. No browning, no fussing.
  • Lentils do the heavy lifting. They cook right in the soup (no pre-soaking), add filling protein and fibre, and cost next to nothing.
  • Kids actually eat it. The vegetables soften into the broth, the flavour is cozy rather than spicy, and a handful of melty cheese on top closes the deal.
  • It makes a big batch. Dinner tonight, lunches tomorrow, and a container for the freezer.

Ingredients

Makes about 3 litres (12 cups) — roughly 6 family servings.

  • 1 medium onion, diced
  • 3 carrots, peeled and sliced into coins (about 300 g / 3 cups)
  • 3 celery stalks, sliced
  • 1 small butternut squash, peeled and cubed (about 500 g / 4 cups) — or a bag of frozen squash cubes, same amount
  • 3 garlic cloves, minced (or 1 tsp / 5 mL garlic powder)
  • 250 mL (1 cup) dry red lentils, rinsed
  • 1 can (796 mL / 28 oz) diced tomatoes, with the juice
  • 1.25 L (5 cups) vegetable or chicken broth
  • 1 tsp (5 mL) dried thyme
  • 1 tsp (5 mL) smoked paprika (regular paprika works too)
  • 1 bay leaf
  • 1 tsp (5 mL) salt, plus more to taste
  • Black pepper to taste
  • 125 mL (½ cup) frozen peas or corn (optional, stirred in at the end)
  • Grated cheddar or Parmesan, for serving

How to make it

  1. Load the slow cooker. Add everything except the peas/corn and cheese: onion, carrots, celery, squash, garlic, lentils, tomatoes, broth, thyme, paprika, bay leaf, salt, and pepper. Give it a stir.
  2. Cook low and slow. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the squash is tender and the lentils have melted into the broth.
  3. Finish it. Fish out the bay leaf. Stir in the frozen peas or corn and let them warm through, about 5 minutes. Taste and add salt and pepper until it sings.
  4. Serve. Ladle into bowls, top with a little grated cheese, and put crusty bread on the table for dipping.

Make it your own

  • Add protein: Stir in leftover rotisserie chicken or cooked sausage in the last 30 minutes.
  • Make it creamy: Swirl in 125 mL (½ cup) of cream or coconut milk at the end.
  • Stretch it further: Add 125 mL (½ cup) of small pasta or barley in the last 30 minutes on HIGH — add an extra 250 mL (1 cup) of broth if you do.
  • Picky-eater trick: Blend half the soup and stir it back in. Same flavour, fewer “what’s this green thing?” negotiations.

Storing and reheating

  • Fridge: Up to 4 days in a sealed container. The flavour honestly gets better on day two.
  • Freezer: Up to 3 months. Cool completely, freeze flat in bags or containers, and thaw overnight in the fridge.
  • Reheat: On the stove over medium heat or in the microwave, adding a splash of broth or water — the soup thickens as it sits.

Dinner that cooks itself, a house that smells amazing by 5 p.m., and leftovers that make tomorrow easier. That’s a fall weeknight win.
